Here is a quick and easy recipe for some shredded chicken…perfect for an easy weekday dinner of chicken tacos, enchiladas, or loaded nachos.
It’s so simple and uses only a few ingredients.
All you need is :
2 large boneless skinless chicken breasts
Half a jar (8oz) of your favorite salsa
1/4 to 1/2 of a container of Gordo’s cheese dip (I buy this at my local Walmart Grocery—if you can’t find this, you can make the white cheese dip homemade— see link at the bottom of this post for that recipe)
1/4 to 1/2 cup of water
Put the chicken breasts, half jar of salsa, and 1/4 cup of water into your instapot (if your salsa is super chunky and without much liquid, increase to 1/2 cup of water)
Turn on high pressure cook for 20-25 mins. When it releases, take two forks and shred your chicken.
(Note : A Crockpot also works well for cooking the chicken if you don’t have an instapot. Just let the chicken and salsa cook on low for 6 hours and then follow the remaining steps.)
Add in the cheese dip. Stir.
Add spices to your family’s liking. I usually add a little garlic powder, onion powder, and our favorite all purpose seasoning. Keep instapot or crockpot on keep warm to until you are ready to serve.
And just like that… you have a pot of yummy shredded, seasoned, cheesy chicken that works amazing in a variety of recipes. Use on tacos, use as filling for enchiladas or burritos, use as topping for loaded nachos, or just eat it a la carte. So simple, but filling and tasty!!

This recipe is so easy! It also is a great recipe for hosting (And showing some of that “simple hospitality” 😜!) A taco bar is always a fan favorite!! Everyone loves tacos!!
