This soup is super filling. It’s creamy, hearty and full of flavor!! AND…It’s not hard to make! Some people say that it is reminiscent of Olive Garden’s Zuppa Toscana soup, but I’ve never had it myself from the restaurant so I can’t vouch for that, but I will say this recipe IS scrumptious. My husband loved it so much that I even made it recently while we were on vacation!! (see my post linked below for more tips on how to save money while vacationing!) Without further ado, let’s make this soup!!
You will need:
Ingredients
1 lb of mild ground Italian sausage meat (or you may use spicy sausage if you prefer a little bit of heat!)
1 small onion very finely diced
1/2 teaspoon minced garlic
3 cups low sodium chicken broth
2 lbs potatoes peeled and diced. (about 5-6 medium potatoes)
1/2 to 1 cup chopped spinach (depending on how much your family likes spinach, you can add it sparingly as a garnish or pack it in there for some extra vitamins!)
1/2 teaspoon salt
1/8 teaspoon black pepper
3/4 cup heavy whipping cream
1/4 cup shredded Parmesan cheese
Instructions
In a large frying pan, brown the sausage with the onion over medium-high heat (4-5 minutes). Add the minced garlic and cook for 1 minute. Drain thoroughly. (I even blot with paper towels)
Add sausage mixture, broth, diced potatoes, spinach, salt, and pepper to your slow cooker (4-6 quarts) and cook on low for 4-5 hours or high for about 2 hours (cooking times vary by slow cooker).
Once potatoes are tender, stir in heavy whipping cream and Parmesan. Continue to cook for 15-20 more minutes.
Serve with warm french bread for dipping. Delish!! 😋
