I invented this recipe by accident about 15 years ago lol!! No cookbook! No online recipe! No inspiration! Lol š It is a 100% āmeā original!! I just had random ingredients in my pantry/fridge and I decided to mix them all together and see what would happen.
Surprisingly, it turned out really well!!! I have made this recipe for our youth camp, multiple events/church dinners etc- and usually each time I make it, I end up sharing the recipe with several people who love it so much and āhave to have!ā the recipe!!
So, hopefully you like it as well!!
Iāve always just said my āchicken noodle soup recipeā but for the sake of the blog lol š , I guess it needs a more official sounding name!
Aunt Tee-Teeās Homemade Chicken Noodle Soup
( Aunt Tee-Tee is what my nieces/nephew call me! š¤£)
Ingredient list:
3-4 āboneless skinless chicken breasts (boiled and shredded- You can use 3-4 cans of {all white meat premium} chicken in a can for convenience but I prefer the fresh, shredded chicken.
32 oz of chicken broth
5 chicken bouillon cubes (dissolved in 1 cup of water āmicrowaving helps dissolve cubes)
Dash of Pepper
Dash of onion powder
Dash of parsley flakes at the end ( use fresh parsley if desiredāI just usually only have dried parsley on hand)
1 stick of butter
1-2 cups of milk
****(see note below about amount)
(you can use heavy whipping cream for an even creamier soup... I usually use milk most of the time because I have it on hand more frequently)
3 chicken flavor seasoning packets (packets only!! Don't use the noodles!! ) from the cheap regular chicken flavor ramen soup packets. Be careful and don't buy the soup cups. It has to be the little packages.
1 package of Amish kluski style medium egg noodles ( I have used all of the brands below)
Directions:
Boil chicken in a large soup pot until full cooked, drain water, remove chicken breasts and shred...
In a separate pot, cook entire package of Amish kluski noodles (12-16oz package) until just tender... do not overcook!! Drain.
In a large soup or stock pot, add cooked noodles and shredded chicken . Cover with chicken broth. Add chicken ramen seasoning (remember, seasoning packets onlyānot the noodles!) Add chicken bouillon cubes/water. Mix well. Heat should be on medium heat at this point. Add black pepper, onion š§ powder, and the stick of butterš§ . Allow butter to melt completely. Stir. Reduce heat to low...
Warm 1 to 2 cups of milk in a measuring cup in the microwave and add to soupāfor my pot, itās usually about 1 -3/4 cup of milk... (I do the microwaving a little bit part to just knock the coldness off the milk from the fridge so when I pour milk into my hot soup it doesnāt clabber)
***How much milk exactly??
(Mainly, how I gauge how much milk I use is on how much room I have left in my soup potāI have rivets for my handles on the sides of my pot and I will try to get it to that rivet line)
Add parsley for garnish!!
After adding the milk, I either put the soup in a crockpot for later or reduce to simmer on the stove. The noodles will continue to cook if you leave the heat up very high and they will turn to mush, so the crockpot (keep warm setting) is a wonderful option if you have a while before eating. I have also just turned soup off entirely and left it on the stove if I didnāt want to dirty up my crockpot and it was just us eating the soup at home... then I turned burner back on and reheated it closer to dinner time.

Leftovers:
This soup will last about 2 days in the fridge. Make sure you allow it to cool completely before refrigerating. I have put it up too warm and it spoiled. So waiting until cool completely is very important on this one!
This soup is so delicious š¤¤ It is such comfort food when you are feeling under the weather or when it is chilly outside!! It also is a wonderful dinner option to take to a new mom, a sick friend, or an elderly neighbor.
I love using this recipe when we are doing a āsoups/sandwichesā theme. Homemade Chili and Homemade chicken noodle soup are always a big hit at church/family dinners. This recipe goes a long way and it is easy to double the recipe for a bigger crowd...
